Prepping for Back to School

One of the more difficult things for me about my kids going back to school is having a lunch packed for them each day. This year I will have three in school, so my goal is to eliminate the early rush in the morning to throw together a lunch and resort to a pb&j sandwich by preparing their lunches the night before and creating more freezer lunches to add variety.  

So I took an afternoon and made up a batch of whole wheat bread dough in my Bosch mixer.  I usually make 6 loaves of bread out of it.  But instead I divided it into 4 parts and made a batch of 1) cinnamon and raisin rolls, 2&3) 2 batches of pizza wheels with cheese, and 4) pizza wheels without cheese.  

The whole process at different stages: some just rolled out, some rising, some cooked.  With my little helper watching it all. :)

Cinnamon and raisin Rolls for quick breakfasts.  I cook them, bag them, and put them in the freezer for easy options to pull out for lunches.  I pull them out at night when I pack their lunches, and they are good and thawed by lunch the next day!

I also made some oatmeal chocolate chip and raisin cookies to freeze.  Makes it easy to pull them and bake up whenever needed.
